Our chefs have worked in professional kitchens and have learned Puglian traditional recipes handed down through generations. They will give you a fun, hands on experience where you will learn techniques of Italian cooking that you can easily repeat at home. You will learn how to make the authentic pasta from our region, orecchiette 'little ears', using a special technique still practised by cooks daily when making the family lunch. Our guests always enjoy the Italian family style environment that we create. Vegetarians and vegans welcome, Puglian cooking traditionally features wonderful local vegetables.

What To Expect
You will enjoy learning to make traditional Puglian food in our chef's home kitchen, at a working farm or in a restaurant kitchen. You will sample award winning wines paired with the courses you create and enjoy eating the 4 course meal you have made in a fun, Italian family style environment. Vegetarian and vegan options available on request.

Orecchiette pasta with a tomato sauce, and braciole
Orecchiette mean 'little ears' ,you will learn to make this pasta from scratch along with braciole , rolled meat parcels with garlic and cheese.

Eggplant Parmigiana
Hand made and oven baked by you, with layers of mozzerella , deep friend aubergine and tomato sauce.

An Italian classic Tiramisu
Served with coco powder to taste and a cheeky dash of Amaro if you wish.

5.00The location, Locorittondo, is a beautiful town and we cooked in a small courtyard of a Trulli under a tree. Our host, Gio, is great company & very attentive. Chef, Lou, guided us through various fun dishes….which tasted wonderful and went well with the wine! Lunch in the shade of a tree enjoying new friends (including Arron and Jack our new 4 legged friends), great food and wine was a great day out. Thank you Gio and team

5.00This was a fun experience even though I am an experienced Italian cook. We shared a beautiful day and meal in an authentic trulli with a great group of people. The menu/class consisted of rustic tomato focaccia, eggplant parmigiana, homemade tagliatelle with bolognese sauce, homemade orecchiette with braseole in tomato sauce and lots of wine! Most appealing was the option to be as “hands on” as you wanted. and the absolute best part was the rustic fig tart made with figs plucked from the trees in the garden. I would highly recommend this excursion to anyone wanting an authentic Puglian cooking class.

5.00This cooking experience was fantastic. Angela and her team were wonderful, and truly made us feel like part of the family! They welcomed us with open arms, and not only taught us how to make each dish, but fed us what we cooked together along with some extra food, and very good wine! She even helped us celebrate a birthday with a cake and candle. I’m so grateful to them for everything! My family loved every second of the cooking experience! Thank you for everything!

5.00This was my first cooking class in Italy so I wasn’t sure what to expect. I was traveling with my daughter and we are both cooks. Gio was so warm and accommodating. I even had to change the date of my original booking and he helped me work it out, even encouraging me to come on a day that he thought would be more interesting for me and my daughter. I can’t say enough about what a wonderful an afternoon it was. We learned how to cook many dishes, but more important was the company and the wonderful meal we shared outdoors at this beautiful villa. the whole team was warm, inviting, generous and yet very skilled and inclusive. I am looking forward to more classes with Gio when I get back to Italy which will be soon I hope.

5.00Giovanni and his team created a wonderful experience for my clients on retreat in Puglia. Learning to make pasta by hand and then being served the most delicious lunch was a highlight. More so the way Giovanni took care of us was so personal, we got an authentic Italian experience with a local Italian! He made us all feel very at home , this added value he especially for my American clients who were visiting Puglia for the first time. I will be hiring Green Italy Tours for future retreats knowing I can trust the level of care and connection on offer. An insiders experience of Puglia, what more to ask for!
