During a recent trip to France we spent one day in Chartres. It was probably the best day of the trip. We had dinner in the Tomate&Piment restaurant on Avenue Jehan de Beauce in the city centre. Brilliant experience. Louis-Martin greeted us and even though they were busy and we did not have a reservation, he accommodated us at the upper level. Great food, casual but excellent dining. Great buzz about the place. Louis-Martin was a fabulous host. I cannot recommend the place highly enough and I would love to call in there again if I ever find myself in Chartres. You won't do better in Chartres!
