• Shopping and cooking with a local touch.

  We had a very nice tour with Hans, starting with shopping all ingredients in the local market along with introduction to various products and how things work out in the market place, and a tasting of the local happy water. :-) Hans will ask if you are ok with going through the butcher shops where fish, snails, toads and various meats are picked and prepared. If you have things you do or don’t want to try just tell Hans. After shopping we went to Hans kitchen located in his private backyard, where we started with a the ceremony with his brother. In the kitchen Hans gave a thorough explanation on how to prepare all ingredients, and especially how to use the wok. We had fried tofu, beer fish with various vegetables ( local specialty ), smashed cucumber, steamed chicken with happy water, garlic and chilli. After cooking we had our lunch in the yard together with Hans and his brother, who also brought some extra dishes to the table and a couple of friends, During cooking and eating we had lot of fun with Hans talking about family everyday life etc. The food was delicious especially the beer fish, drinking happy water is a part of the experience, but if you don’t like it just ask for water og tea. Afterthoughts, next time I would challenge myself with more special local ingredients, on the other hand all ingredients we used are common so it’s easy to replicate the dishes at home. Have fun

  We had a great afternoon with Hans and his family 😍 it was realy special occasion to meet you, chef Hans , and to spend time with local people's, it was wonderfull evening like a big Chinese family, thanks for that and for a lovely and tastefull dinner 🩷.

  The experience with Hans was wonderful, because it allows you to immerse yourself in the authentic local culture. Before the actual cooking he introduces you to the habits, history and traditions that led the local Chinese people to have a certain lifestyle and nutrition. It was really interesting, engaging and original, and he is a kind person, helpful and passionate about his work. I recommend it to all those who want to learn more about Chinese culture from a point of view not purely tourist. I participated alone and I felt perfectly at ease, indeed, it was one of the best days of my entire itinerary.

  Hans was a great communicator and included all members of the family in his tour. He made the market visit fun and showed us a different way of life to our own.   Really nice class with Hans. He is super friendly and knows a lot of places I would never have ended up by myself. He takes care of food preferences and allergies, so especially as a vegetarian there was always a great option.We had an amazing time in our class with HANS. He made our experience fun and engaging, shared lots of local knowledge, guided our group through the instructions and most of all helped us make 4 delicious dishes, followed up with a little surprise!   One of my most beautiful memories from this trip to China. I don’t know how to thank Hans enough. Beyond the culinary discoveries, the market, and local customs, we had the chance to meet his family and experience their generosity, discover calligraphy with his brother Roger, and share a wonderful family lunch together, thanks to the Happy Water, which made the experience even more magical. I will carry with me, with deep emotion, the words we shared and the moments we lived together. Hans, you are welcome in France anytime — it would be a real pleasure to host you here.   Great experience! After an interesting trip to the market to buy the raw materials we cooked some very good traditional dishes. It was fun eating together with Hans and his brother, who also gave us demonstration of his artistic skills.
