You’ll learn how to spot quality, understand what makes each product unique, and why these choices matter in authentic Italian cooking.
Back in the kitchen, we’ll prepare classic dishes together. I’ll share tips, techniques, and stories from my 13+ years as a professional chef. This isn’t just a cooking class—it’s a full immersion into the flavors, traditions, and soul of one of Italy’s most treasured food and wine regions.

What To Expect
The experience will consist of two basic phases: The first will be dedicated to a tour of the historic markets of the Langhe where, with my decades of experience as a chef, I will guide you in choosing and appreciating the various local ingredients according to seasonality. The second part will be a cooking class in my Alba workshop with the ingredients purchased together. We will prepare a three-course lunch, during which I will explain the recipes and teach the techniques that make the gastronomy of the Langhe special. The whole experience will be an opportunity to explore the history and culture of the Langhe through two of its cornerstones: cooking and food.

5.00Chef Fabio was amazing! The trip to the market to learn the secrets of buying fresh items, selecting high quality items, and meeting some of the locals was a highlight of the trip. Then it only got better once we started to learn about the history of the food and the area. Lastly, we got to eat the items we selected and cooked…his patience and teaching ability was exceptional.

5.00We spent a fabulous 1/2 day with Fabio, first shopping in Alba, then onto his home for some amazing lessons in putting together great ingredients that resulted in a delicious 3 course meal. Fabio's culinary knowledge and creativity, as well as his ability to listen and integrate ideas for a menu on the spot is impressive. I have returned home feeling inspired to start cooking again after a long hiatus from my kitchen.
