This is a small-group miso making experience held in a local home kitchen in Fukuoka. You will learn the basics of Japanese miso and fermentation, including ingredients, tools, and simple techniques used in everyday home cooking. During the experience, you will make your own batch of miso to take home. I will guide you step by step, so no cooking experience is needed. You will also enjoy a tasting of homemade miso soup and learn how miso is used in daily Japanese meals. After making miso, we will prepare a simple Japanese home-style lunch together and enjoy it at the table. You can also try local Japanese sake, homemade fruit liqueurs, seasonal juices, and pickles, just like a Japanese family meal. This relaxed, hands-on experience is designed for travelers who want to connect with Japanese food culture in a warm and personal setting.
Take-home miso you prepared (1 kg), miso soup lunch, three side dishes, dessert, a homemade drink or one alcoholic beverage.

This was a lovely experience - a chance to learn more about Japanese culture through food. Hiroko-san is such a kind and friendly teacher. We learned about the different kinds of koji that can be used to make miso and made a local style barley koji miso. We also made lunch - a special menu for Hinamatsuri (Girl's Day) and Hiroko-san was kind enough to note our food allergies and adjust as needed. Her English is very good and she also teaches the class in Japanese too if you're interested in practicing. By the end of the class, it felt like sharing a meal with a local friend.
