Whether you are a child or a foreign tourist, anyone can enjoy authentic soba noodle making experience at Shinshu Soba Restaurant Yamahei in Karuizawa Prince Outlets (5-minute walk from Karuizawa Shinkansen Station). An Experienced instructor will carefully guide you through the process of kneading, stretching, and cutting soba noodles. The finished soba noodles will be served with tempura and the famous walnut sauce on the spot.

What To Expect

When you think about Japanese traditional food, probably Sushi, tempura, and soba will come to your mind . Among Soba, Shinshu(old name of Nagano) soba is used for soba produced in Nagano Prefecture. This land has been famous for soba since ancient times. Nagano is a mountainous prefecture which doesn’t have many flat fields. Fortunately, soba is best suited for cultivation in high-and-cold regions. That’s why good quality soba has been cultivated on the slopes of the mountains in Nagano. In this restaurant, we peel off the soba husk by ourselves and grind the soba flour using a millstone and water mill. Karuizawa is famous for Walnut soba. It is one of the ways to eat Shinshu soba by putting ground walnuts in the soba soup. After today’s experience, we will serve the dish with the walnuts in a small mortar, so if you are interested, you can try grinding the walnuts yourself and adding them to the soba soup.

    A very kind local soba chef will teach you. The taste of the soba I made was exceptional. There are also soba-making costumes and pedestals for elementary school students, so even children can enjoy them.

    A local soba artisan was very kind to tell us! Guides in English are also available. The region's specialty, walnut soba, was excellent. It is very recommended because it is located in the outlet and has good access.
