This was such a fun and unique experience! It's held in a lovely Milan family apartment. While I suspect it's now strictly used for class, the family history is apparent, and it's a comfortable place to gather. Our instructor and his assistants made us feel very welcome and fostered a fun, collaborative environment among participants from all over the globe. I'm an experienced baker and feel very comfortable in the kitchen, but I've never made pasta from scratch. I appreciated that we all had the opportunity to complete all of the steps and received great feedback throughout. Most of the ingredients were pre-portioned, but our instructor provided wonderful explanations on why and how each step was done. Everyone was provided their own cooking tools (no need to share), and all of the equipment worked well. We rolled and cut the tagliatelle pasta by hand. We used a KitchenAid mixer with a pasta attachment to roll the ravioli dough and 2 different tools to cut it. The instructor also provided examples of other equipment that could be used. The instructor selected different people to complete some of the other steps, like mixing and portioning the ravioli filling, and with the clear explanations, I'm confident it will be easy to replicate these steps at home. My sister was selected to make the simple sauces. All of the pasta was cooked together, but with the feedback during preparation and sanitary measures in place, I think everyone's contributions met quality control standards. It looked and tasted delicious! My sister and I chose the tiramisu option (vs. gelato), which was a simple but delicious recipe. White wine was served with the meal, and a shot of homemade limoncello concluded the experience. Other drink options were offered to individuals who chose not to partake for any reason. Carafes of water were available throughout cooking preparation and the meal (very much appreciated after a long day of walking all the Milan neighborhoods). A week later, we are reattempting these recipes at home and plan to use them again and again. Overall, I'm so glad that my sister selected this class. We left extremely happy after an evening of connections, learning, and a great meal with full tummies, and feeling just a little buzzy. :-)
