WHEN you have a chocolate factory barely a quarter of a mile away from where you are staying in Siem Reap then a visit is inevitable. It is just off Angkor Night Market Street and a large "Chocolate Factory" sign alerts visitors that they have arrived. A $2 tuktuk ride will get you there from pretty much anywhere in Siem Reap. This attraction is in its infancy but it's rough and ready approach to tourism only adds to its charm. For a start, when you arrive it is not immediately apparent where you have to go, but if you look to the left side of the building there is a narrow alley down which you walk until you reach doors which can be opened into a wide admission area where staff will quickly approach you and ask if you want a tour. The cost is only $5 and you must wear a hair net and leave bags outside the working area for hygiene reasons. Our guide told us that we were in Cambodia's first chocolate factory and gave us some information and demonstrations about the whole process from where the plants which produce beans for chocolate grow best to how those beans are processed. We had a chance to taste some of the granules from early stages in the process before we moved on into different sections covering everything from butter to liquid chocolate. Then we were shown round more sections where we saw how different flavours of chocolate bar are hand-made with the ingredients from mango to black pepper painstakingly added. One order from a hotel for a 1,000 hand-made chocolates was being done while we were there and we watched as individual pieces of fruit were added to the chocolate. Very labour intensive but then this is quality rather than quantity. Crucially -- from our point of view -- we got to taste different flavours, as many as we wanted....and there were several dozen! At the end we bought several bars include mango milk chocolate and one with ginger in it. Delicious! Don't miss a chance to come here because it is an attraction you don't see everywhere.
