A deep dive into the world of fine Japanese knives, a hands-on experience in Tokyo. Participants will learn how a Japanese knife is made, sharpen one, watch a cutting demonstration, and join a cooking class to make Sashimi Zuke-don or Sushi for lunch. You will start with a detailed explanation of Japanese knife culture. Then, observe a demonstration of expert knife work and use a professional Japanese knife to cut your own Sashimi. Next, you will create your own Zuke-don or Sushi using the very sashimi you sliced yourself, making the meal truly personal. Zuke-don is a rice bowl topped with marinated fish. Please note: Children aged 6-11 cannot use knives; parents or instructors will cut the fish for them. For the Tuna Don Workshop, you will learn to sharpen a knife while the fish marinates. In the Sushi Workshop, the instructor demonstrates sharpening techniques while you eat; you are welcome to try it yourself after the meal. At the end of the class, enjoy your handmade Tuna Don or Sushi with miso soup and our original sake.

Spent a very enjoyable afternoon with the team at Kappodo learning about Japanese knife types and handling skills as well as making Sashimi. A really nice experience and well worth an afternoon of your stay in Tokyo!

It was a great and delicious experience. We booked a sushi making class, and the instructors are very knowledgeable and helpful. The staff are very accommodating and kind! There is english translation if needed. A must do experience if you like sushi, and they also offer knife sharpening classes :)

What an experience! I was lucky to have Chef Naomi and his lovely translator Kim to myself and enjoy the very interesting class. It’s not only about knife sharpening, but rather an insight into true japanese culture. I can’t wait to get home and put my new knife skills into practice. I highly recommend the Kappodo Institute and am sure that nobody will regret coming here. I certainly will be back for the Sukiaki class.

The learning experience was detailed and informative. The instructors taught in both Japanese and English languages, their hands on demonstrations provided an opportunity to participate, but also enrich your experience. The meal that you create add a new level of delicious appreciation.
