A deep dive into the world of fine Japanese knives, a hands-on experience in Tokyo. Participants will learn how a Japanese knife is made, sharpen one, watch a cutting demonstration, and join a cooking class to make Sashimi Zuke-don or Sushi for lunch. You will start with a detailed explanation of Japanese knife culture. Then, observe a demonstration of expert knife work and use a professional Japanese knife to cut your own Sashimi. Next, you will create your own Zuke-don or Sushi using the very sashimi you sliced yourself, making the meal truly personal. Zuke-don is a rice bowl topped with marinated fish. Please note: Children aged 6-11 cannot use knives; parents or instructors will cut the fish for them. For the Tuna Don Workshop, you will learn to sharpen a knife while the fish marinates. In the Sushi Workshop, the instructor demonstrates sharpening techniques while you eat; you are welcome to try it yourself after the meal. At the end of the class, enjoy your handmade Tuna Don or Sushi with miso soup and our original sake. **Due to time constraints, the sushi workshop option will not include knife sharpening. New: Kakigori (Shaved Ice) Add-on (ask us on the day!)

We did this experience on the second day of our honeymoon. The staff was very kind and did not hesitate to take the session at a slower pace when needed. We would love to come back in future for another experience.

The staff was very kind and we were the only people in the class so it was very intimate! We learned a lot about how Japanese knives are made how to cook the rice and shape it into the appropriate form for nigiri as well as most importantly how to cut the fish!

If you’re even remotely interested in Japanese knives, sushi, or sashimi preparation, this class is an absolute must in Tokyo. What we thought would simply be a fun activity turned into one of the most educational and memorable experiences of our trip. Hostess Hiromi and Chef Naoya created such a welcoming, engaging, and personalized experience from start to finish. Their patience and attention to detail were incredible, especially since our group had varying levels of knife skills and kitchen experience. Some of us were complete beginners, others more experienced, and we were also a mix of ages, yet every person received individual guidance, encouragement, and care throughout the class. Chef Naoya’s knowledge and teaching style made learning proper knife techniques approachable and fascinating. We learned so much about selecting and preparing sashimi, using Japanese knives correctly, and respecting both the ingredients and the craft itself. Hiromi made the entire experience feel warm, seamless, and genuinely special. The ingredients were exceptionally fresh and high quality, and the cleanliness of the space was absolutely impeccable. Every detail reflected professionalism and pride in what they do. And honestly… getting to eat everything we made at the end was the perfect finale. 🍣🔪 This was far more than a cooking class. It was part culinary education, part cultural experience, and part unforgettable memory. I only wish I were staying in Tokyo longer because I would absolutely take every class they offer.

We had a wonderful experience participating in the sushi-making and knife skills class. The instructor (Naoya) gave a very clear and impressive demonstration on how to properly use and slice with the knife. There were both English and Chinese translators available (Wei Xin), which made the whole experience very comfortable and easy to follow. We also had the chance to make our own sushi using maguro, prawn, and ikura, which was really fun and hands-on. After that, we enjoyed our freshly made meal along with sake and dessert—such a nice touch to end the session. So glad we found this hidden gem. Highly recommended 👍
