I eagerly booked a cooking class with Chef Vivian because I’ve long been intrigued by Chile’s geography. Although part of a large continent, vegetation-wise it is effectively an island, bounded by mountains, desert, and ocean. Thanks to such environmental isolation, it has many “not available elsewhere” ingredients. For example, Chilean Goat Horn pepper was featured in our shrimp pil pil. Our dessert papaya was also very different from the papaya of other countries. Under Chef Vivian’s patient guidance, we also made a delicious (and super healthy) ceviche and a traditional Chilean snack, sopaipilla. I look forward to recreating both dishes back home to surprise and delight my friends. Vivian’s talents as a professional chef are obvious, but I was most pleasantly surprised by her natural hosting abilities, as she facilitated conversations between participants and made sure we all could get our hands dirty at the different cooking stations. This was so much better than going to a restaurant.
