What To Expect

What's the best opportunity to fully enjoy Sicily? We will prepare fresh tagliatelle with pesto from my garden (or alla norma) and typical Sicilian cannoli, starting everything with an aperitif with local products. I will therefore show you the secrets and recipes handed down by my grandparents in their ancient bakeries. Everything will take place in my house immersed in the Conca D'Oro and overlooking the beautiful city of Palermo. You will comeback home with a treasure of flavors and recipes handed down over time.

    From the moment we stepped into Carlo’s breathtaking “garden” — overflowing with every fruit and vegetable imaginable — it felt like we’d been welcomed into a living, breathing love letter to Sicily. One bite of a sun-dried tomato (hands down the best of my life) and I knew this was going to be special. We rolled up our sleeves and made cannolis completely from scratch, then moved on to fresh homemade pasta paired with the most incredible tomato sauce I’ve ever tasted. Add a dreamy Caprese with burrata, perfectly chilled prosecco, and Carlo’s warmth and expertise as a host, and it felt less like a class and more like being welcomed into family.

    Our cooking class with Carlo was one of the absolute highlights of my trip. We were a family of 5 on a week long trip to Sicily. The moment we arrived at his beautiful countryside home, I knew it was going to be something special. We were picked up by the transportation service that he recommended the ride was comfortable and we saw parts of Palermo that we would not have seen. Carlo welcomed us like old friends and immediately made us feel at home. He had his mother in law there to help as well and she was every bit of an Italian lady. Every ingredient we used came straight from his garden: fresh herbs, vibrant vegetables, and even lemons. You can taste the difference in every bite. We made homemade pasta from scratch—kneading, rolling, and shaping it under Carlo’s patient guidance. And the cannoli! He walked us through the entire process, from preparing the shells to mixing the creamy, sweet ricotta filling. It was hands-on, fun, and surprisingly doable thanks to his tips and encouragement. What really makes this experience stand out is Carlo himself. He’s warm, knowledgeable, and clearly passionate about sharing his traditions. Between cooking, sipping wine, and hearing stories about his family recipes, and background, the whole afternoon felt like being part of something authentic and heartfelt. If you’re looking for a genuine Sicilian cooking experience with unforgettable food, beautiful scenery, and a truly wonderful host, Carlo’s class is an absolute must. I would recommend it to

    Incredible day at Carlo's villa, picked us up and dropped us off at the bus stop. Everyone at the house were welcoming and friendly. Relaxed atmosphere and learnt alot, our favourite thing we did on our holiday and can't wait to try make our own cannoli!

    My husband and our friends booked cooking with Carlo for our trip to Palermo and it was 1000% one of the highlights of our vacation! I can’t even describe how beautiful the view and the sunset was while we were cooking outside on his back patio. It felt like we were in a movie! They even played music to perfectly set the scene! Carlo, his mother, and mother in law were so warm and helpful. They fed us the most delicious food and kept our wine glasses full while we worked. The cannolis we made were the best I’ve ever had and I cannot wait to recreate the recipe this year for Christmas with my family! What a perfect day and an amazing experience. I highly recommend cooking with Carlo!

    My husband & and I, along with our 2 friends were coming to an end of our 2 week vacation through Italy and Sicily, diid we really need another cooking class???? But I couldn't resist some of the other reviews written by Carlo's guests...and had to experience for myself. Read other reviews for details about what and how we cooked, but I'd like to tell you it was more like spending time with friends sharing stories while making your own pasta, and the best Cannoli's this Italian has ever had. So to answer my own question... Yes, we did need one more cooking class - Carlo's !

    Cooking with Carlo was an AWESOME experience - so warm and friendly, like being invited to a dear friend's home in Sicily. The views from the terrace are spectacular. Learning to make the dough for cannolis and learning to make the pasta was a breeze with such a devoted and engaging teacher. And dining on the end result, with fresh tomatoes from the garden and home-produced olive oil, was a delight. It's been the highlight of our vacation so far. We will have great memories of the experience for years to come!

    This was a beautiful experience Carlo and his wife helped with setting up our transportation from palermo. His home has a beautiful garden that we toured and were educated at the same time. We learned how to make cannoli and pasta … It was a lot of fun and relaxing at the same time. Carlo was a wonderful teacher and host.
