What To Expect
You will participate in hands-on learning of the preparation of a 400-year-old recipe from Afro-Colombian pastry chefs who settled in the Palenque region. Afterward, enjoy the fruits of your labor for a delicious intimate meal. Under the guidance of two expert Afro-Colombian women, your group will follow the steps used for centuries to prepare this healthy cuisine. Adding meat, vegetables, rice with a rich thistle and the addition of subtle local spices, everything is wrapped in traditional bijao leaves, tied with natural fique (fibers) to cook and then serve. Voila, a delicious completely local, sustainable and natural recipe to make and enjoy. The details... You will learn about the history of the Afro-Colombian culture. and its rich traditions. You will experience step by step, careful advance preparation by your hosts allows you to proceed quickly through the process, saving valuable time without missing a thing. 5.00Marcy, Orika, Yolina, and Dilia gave me an experience I will always remember. I really enjoyed myself. Not only did I learn how to make and eat a pastel (meat, rice, vegetables, and a lot of spices wrapped in leaves) how the Palenquero people (escaped slaves who created a culture and community where no one could find them), but I also enjoyed learning the history of their people. They were great fun to spend time with. They have received awards for their food. And it was great.
The most exciting food of my entire tour of Cartagena.

5.00Do yourself a favor and attend this cooking class while in Cartagena. I took it on a whim as I was looking for something different to do. Not only did I learn how to prepare one of the most delicious, authentic and interesting dishes I had while in Cartagena, I also came back grateful that I attended and inspired by Marcy and Yolina's story. As a bonus, you get to see a real Colombian neighborhood. Marcy and Yolina are very organized and well prepared to share their knowledge of how to make the pastel cartagenero and its origin from Palenque history. The time also worked out perfect as you prepare your lunch and then can take off exploring the city with a full and satisfied belly. I would actually take it again if I go back to Cartagena just to have another pastel. They were not in any other menu around the city.
