Jerk cooking is an authentic Jamaican way to cook meat. Whether it is pork, chicken, beef or fish, the meat is seasoned and slowly cooked over an open fire or on a barbecue grill.
"Jerk" is made up of regional spices ranging from scallions and thyme to pimento (all spice) and cinnamon. The first taste of jerked food is hot with pepper, but as you eat the other spices explode with stunning flavour. It is for this reason why all the other islands have adopted Jerk.
Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning.
Nicole will introduce visitors to all jerk spices and history, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home.
Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!

Please be aware that we may need to move your booking to another day to meet our 4 person minimum. If your party is less than 4, please book into an exsiting class, or contact us.
We require multiple hand washings and masks to be warn if a guest has flu-like symptoms.
For a full refund, cancel at least 24 hours before the scheduled departure time.

The seasoning is made up of local/regional spices like scallions, onion, thyme, pimento (all spice), cinnamon, nutmeg, peppers and salt. The first taste of jerked food is hot with pepper, and as you eat the flavors of all the other spices mingle in your mouth giving an explosion of stunning flavor. It is for this reason why all the other islands have adopted Jerk. Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning. In Nicole’s class, Nicole will introduce you to all the jerk spices, provide a history about jerk, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home. Once lunch is ready, guests will enjoy eating on our large veranda overlooking the Caribbean Sea (and the hummingbirds that frequent our orchids). * Vegetarian options are available upon request.

Hands-on cooking class using recipes for a 3-course lunch with Jamaican Jerk seasoning as the focus. Monday - Saturday, 11 AM - 3 PM. Only 10-20 minutes from the Harbour and airport.

I saw this on an Antigua FB group and booked the Jerk cooking day - what a fabulous day Only 10 people and a lovely group. Nicole and her home are amazing and so welcoming. The day flew by and we loved every second! We cooked, we drank rum punch, we did a rum tasting and all sat together to eat. Don’t hesitate book this The pictures speak for themselves

Nicole has the best personality and knowledge to make this a wonderful time together. How much fun it was preparing, learning, and dining together! We tried the recipes again once we were home; they were easy and equally as delicious. This was definitely the best thing we did when in Antigua. Nicole opens her beautiful home and provides a professional service with friendliness and warmth. We highly recommend Nicole!

Just a relaxed, fun day, where we learned a lot, ate well and enjoyed Nicole - and her family. Off a cruise ship (taxis are a hassle; if did again, would ask Nicole to book something for us, but we got lucky and stumbled into Miguel). Hot, muggy and crowded downtown. Beat the crowds; get up into the hills. Nicole is a pro - experience chef and people-person. If you like to cook, or eat, or have a pleasant day, just go.

This was such an amazing experience. My husband has been on the search for 9 years now on how to make authentic jerk chicken. Nicole and her family opened up their beautiful home to us and did just that. The food we made was so full of flavor and love. We cannot wait to make them at home for our family and friends.

This was a wonderful experience with Nicole and her family. They were gracious hosts. So many of the foods we cooked came right from her garden outside. Everything was so fresh and delicious. She made this type of cooking accessible to us, even without any experience. We also met some other lovely people and had a relaxing fun meal together. Can't recommend enough.

We were greeted at the door to Nicole’s beautiful house. She showed us through to her back garden which was teaming with greenery and lovely large chairs to relax in. She had a bouncy and welcoming energy to her. Every part of the food preparation was well explained and we were all encouraged to partake. Conversation ranged from food to history of the island and everything In between. The class lasted 4 hours and the time flew by and we all made way too much food to eat on one sitting. All in all I would highly recommend this for solo travellers, couples, families and everyone else. Thank you so much for having us Nicole.

What an amazing experience! Nicole was a fantastic host who made us feel very welcome and relaxed in her beautiful home. There were 7 of us in total doing the cooking course and we all got to know each other over a rum punch on the terrace - which had a fantastic view towards the sea. Nicole clearly explained what we each had to do and the time flew by as we prepared and cooked the jerk chicken, pineapple salsa (so good!), plantain crisps with a lime dip, salad, rice and beans, and a simple but delicious coconut custard tart. We loved the food so much we have made it several times since and the tangy pineapple salsa is now made for every bbq we have. I highly recommend attending one of Nicole’s cooking days.

We were a party of 4 and had a wonderful time at Nicole's Table. Nicole and her family were very welcoming into their beautiful home. She taught us about jerk and then, with her direction, we proceeded to make the jerk for the chicken and remainder of the meal. As I was a picky eater, Nicole made some adjustments to accommodate me which was not at all expected but very much appreciated. We ate our meal on their beautiful porch and took in the scenery around us. We also drank rum punch was very good. We had a great time!! All the food was excellent. It was such a cool experience, and so glad that we did it.
