Jerk cooking is an authentic Jamaican way to cook meat. Whether it is pork, chicken, beef or fish, the meat is seasoned and slowly cooked over an open fire or on a barbecue grill.
"Jerk" is made up of regional spices ranging from scallions and thyme to pimento (all spice) and cinnamon. The first taste of jerked food is hot with pepper, but as you eat the other spices explode with stunning flavour. It is for this reason why all the other islands have adopted Jerk.
Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning.
Nicole will introduce visitors to all jerk spices and history, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home.
Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!
Infants and small children can ride in a pram or stroller

The seasoning is made up of local/regional spices like scallions, onion, thyme, pimento (all spice), cinnamon, nutmeg, peppers and salt. The first taste of jerked food is hot with pepper, and as you eat the flavors of all the other spices mingle in your mouth giving an explosion of stunning flavor. It is for this reason why all the other islands have adopted Jerk. Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning. In Nicole’s class, Nicole will introduce you to all the jerk spices, provide a history about jerk, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home. Once lunch is ready, guests will enjoy eating on our large veranda overlooking the Caribbean Sea (and the hummingbirds that frequent our orchids). * Vegetarian options are available upon request.

Hands-on cooking class using recipes for a 3-course lunch with Jamaican Jerk seasoning as the focus. Monday - Saturday, 11 AM - 3 PM. Only 10-20 minutes from the Harbour and airport.

What a great time we had and the unexpected skills learnt were a bonus. Nicole is a super teacher giving clear instructions and we achieved so much in a few hours, all of the food we made, and then enjoyed, was absolutely delicious. Her home is stunning, we were made very welcome. Highly recommend. Now I just have to hope I can replicate at home!

This was amazing thank you Nicole for having us in your home to learn about Caribbean Jerk Chicken. Nicole and her husband run this business form your home and we felt honoured to be there. We felt it was quite unique to run a business in your actual home, they were both very lovely, welcoming and genuinely wanted you to have an amazing day. Truly memorable and would recommend. We loved the rum punch too! It was a great hands on experience, learning about Caribbean cuisine and ingredients and putting them together. I loved making the fried plantain chips from scratch the best! And you work together as a team to make the different courses and then you share them together family style. It was a great experience to meet new people form around the world too. Thank you x

My wife and I wanted a change from the normal cruise port routine, and this experience filled the bill wonderfully. Nicole and Adam's house on the hill is lovely and inviting (as are the hosts). Immediately upon arriving, you will feel comfortable. Our All abut Jerk class expanded our cooking horizons and kept us laughing. We have planned a tropical night back home with our family, armed with Nicole's instruction. Yes, the food was that good. And the jerk chicken was easily the best we ever tasted. Thank you, Nicole, for making our day special.

Our group of friends did this class while in Antigua on a cruise. I’ve done a number of cooking classes in various places and this one was great. Nicole’s home is beautiful and the views are amazing. She does a great job managing the small group and making sure everyone got to be hands on to the extent they wanted. The food was delicious and I look forward to making the recipes at home soon!

Amazing experience!! Nicole is so easy going and a wealth of knowledge. She likes to get to know her guests and share stories. Her home is beautiful and has an awesome view. The food. Cannot even put it into words. Loved the hands on experience. Its definitely not you watching Nicole cook. I would recommend this activity to anyone. You won't be dissapointed!

This was an enjoyable activity. Nicole is an experienced caterer and enthusiastic about getting all involved whatever skills level. We were welcomed with and well supplied with a lovely rum punch. Whilst the food was cooking we sampled seven different rums by the knowledgeable, Adam. The food we'd prepared was very tasty the soup and cake in particular. Will be trying out these recipes for sure when back in England

What an amazing excursion, if you get a chance you must go. Her place is beautiful, the view is stunning and they are wonderful hosts. Not too mention, you get to prepare and eat a meal. Loved this excursion.
