First, your local guide will take you to visit Mercado Central de Valencia - Europe's largest food market. Here, you'll buy your fresh ingredients. For evening tours and tours on Sunday, the Central Market is closed so we will skip this step and go straight to the cooking!
You’ll then go to the paella kitchen for a live paella workshop with a professional chef. Follow along step-by-step at your own cooking station and learn the local tips and tricks of what makes this dish so special.
After the class, sit back and enjoy some local tapas, wine and, of course, your very own paella.

We joined the Sea Saffron Paella Cooking Experience while our cruise ship was in port, and it became one of the highlights of our visit to Valencia. From start to finish, the morning was perfectly organized, relaxed, and genuinely authentic. Our host Reyes met our small group of twelve promptly in Plaza Manises, near the Hotel Palau Vallier. She and her assistant Ian immediately made everyone feel welcome with a glass of sparkling wine, local cheese, and nuts as we gathered in their modern teaching kitchen just off the square. Ian introduced four regional Valencian wines we’d enjoy throughout the morning, while Reyes shared the fascinating history of paella and its protected status as part of Valencian culture. The class was entirely hands-on—we cooked our own individual pans of paella valenciana, using chicken, rabbit, green beans, and butter beans, along with saffron, tomato, and olive oil. Reyes emphasized the golden rule: “After two minutes, don’t stir the rice!”—and kept a close but friendly eye as each couple worked through the steps. The aromas of toasted rice and saffron filled the kitchen, and everyone was smiling as the pans sizzled. When the paellas were finished, we sat together at a long table, sharing stories and local wine while Reyes served dessert—a light coca sponge cake. Eating straight from the pan, just as Valencians do, was a special touch, and discovering the crunchy socarrat crust at the bottom was pure joy. Everything—from the setting to the pacing to the warmth of our hosts—felt thoughtful and professional. It was educational without being rushed, and social without feeling touristy. Reyes and Ian clearly love what they do, and their enthusiasm shines through in every detail. If you want to understand Valencia through its most iconic dish, this class is perfect. Highly recommended for food lovers, culture seekers, and anyone who enjoys authentic, personal experiences. Tip for cruise passengers: The meeting point is about four miles from the port—taxis are easy (€15 each way) and usually faster than the ship’s shuttle. Allow extra time if there’s a city event or race, as streets may close.

As a solo traveller this was my way of 1) ensuring I eat some proper paella since most restaurants only offer paella from 2 persons on and 2) to meet new people. The city tour was interesting and fun, the wine selection and background information was great, and cooking + eating the paella really topped it off! The hosts were very kind and clearly knew what they were doing. I highly recommend this activity

Victor and Samantha were awesome. They answered our questions and interacted with everyone in our group. We were only 7 so we got a lot of opportunity to talk with them. We were in groups of 2 or 3 so it was easy to be hands on. Samantha tempted us with several delicious appetizers and explained the wines we were sampling. Victor gave us wonderful tips and you could tell that he loves what he does. I would gladly take this class again if I am ever in Valencia in the future. As for visitingg the market, the detailed info does say that the market is closed in the afternoons and evenings. I searched several days to see if there was a class to see if there was one in the morning but either they were all full or not offered. I would not have let this put me off taking the class. It was still very much worth it.

Enjoyable experience. Victor was excellent as a guide through the market and town as well as chef teaching us how to make paella. The venue was fantastic and the wine tasting a bonus.

Víctor and Michelle went above and beyond to make this a wonderful experience for everyone. The walk to the market was beautiful and Chef Víctor told us about the city along the way. During the class all the appetizers and wines were delicious and generously served. The instructions during the class were patient and straightforward. They even surprised us with dessert. With every step Victor and Michelle told us about Valencian culture and history behind the food. I have rarely felt more pampered. It was also really fun getting to know the other tourists in the group. I would absolutely recommend this experience to anyone.
