In this class, you realize that what we often think of as “sushi” today is just a small part of a much larger and more diverse tradition.

The reason I created this class is to share the comfort and joy of mutual understanding and friendship through the experience of food.

I am an artist who has worked in both traditional Japanese arts and the world of Japanese cuisine.

Through this path, I’ve come to understand that “tradition” is not a single correct form, but rather a rich and diverse collection of cultures shaped over time.

That belief—and my multidisciplinary background—is at the heart of what makes this experience unique.

While the definition of tradition differs from person to person, I believe one key to imagine the way people lived before the Industrial Revolution.

Experiencing different cultures and discovering what connects us can fundamentally change how we see the world. I believe that is one of the most enriching experiences we can have.

What To Expect

We will meet at JR Musashi-Sakai Station at 10:00 AM. From there, we’ll drive you to our home in our private car. In this 4-hour sushi-making workshop, you'll learn to create six types of plant-based sushi using seasonal ingredients and traditional Japanese tools. You’ll begin by exploring the meaning and evolution of “sushi.” You’ll also learn how to make sushi rice by mixing it with vinegar. Then, with hands-on guidance, you’ll make bellow You’ll also practice using traditional tools for example Japanese kitchen knives. At the end, enjoy the sushi you made yourself—and it is also nice to exchange and try the sushi made by others in the group. The class is vegan and open to all—no experience required. All equipment is carefully washed and sanitized before your use. Please be aware that some tools may also be used for cooking fish or meat outside of this vegan class. We can adjust the class length. For example, we once held a 12-hour, 2-day intensive course that included everything from cooking rice to full preparation. If you would like to change the course content, please contact us. After hearing your preferences, we will set the price accordingly.

    In this class, not only do you get to experience a former sushi chef teaching you to make a variety of rarer types of sushi like gunkan and Shikoku-style vegetable sushi, but also more well-known types such as inari zushi and kappa maki. I loved the inari zushi, kappa maki, corn and vegan mayonnaise gunkan sushi and red bell pepper sushi. A variety of sauces are provided- the soy sauce with koji was amazing. You also get to learn about different kinds of knives as well as the history of sushi, including types that people ate out of necessity in the past. It's held inside an airy cooking studio inside the hosts' home, with traditional cooking implements where possible. The hosts are friendly and welcoming. Highly recommended!

    A very engaging and interesting sushi course.👏 Not only did we learn how to make sushi with traditional tools, but we also learned about the history of Sushi and how it has changed over the centuries and developed in different regions. Sushi is truly diverse, and the course did a good job at highlighting that. And of course, the sushi we made was delicious, probably the best sushi we’ve ever had. Rei and Chie are genuinely open minded, kind and warm people. It was a joy being instructed by them. It was a safe space to learn and be curious in. We loved their focus on mutual understanding and communication through sushi making. They have a very interesting perspective on how food culture has adapted to changing circumstances, such as technological developments and modern people’s needs. They also gave us tips for making sushi in our home country, such as what ingredients and tools we can use to adapt the sushi to our local conditions. Highly recommend this sushi making experience! 😊
