The reason I created this class is to share the comfort and joy of mutual understanding and friendship through the experience of food.
I am an artist who has worked in both traditional Japanese arts and the world of Japanese cuisine.
Through this path, I’ve come to understand that “tradition” is not a single correct form, but rather a rich and diverse collection of cultures shaped over time.
That belief—and my multidisciplinary background—is at the heart of what makes this experience unique.
In this class, you realize that what we often think of as “sushi” today is just a small part of a much larger and more diverse tradition.
While the definition of tradition differs from person to person, I believe one key to imagine the way people lived before the Industrial Revolution.
Experiencing different cultures and discovering what connects us can fundamentally change how we see the world. I believe that is one of the most enriching experiences we can have.

We will meet at JR Musashi-Sakai Station at 11:00 AM. From there, we’ll drive you to our home in our private car. In this 4-hour sushi-making workshop, you'll learn to create six types of sushi using seasonal ingredients and traditional Japanese tools. You’ll begin by exploring the meaning and evolution of “sushi.” You’ll also learn how to make sushi rice by mixing it with vinegar. Then, with hands-on guidance, you’ll make bellow -Nigiri (hand-pressed sushi with toppings) -Inarizushi (tofu pouches with rice) -Gunkan -Hosomaki (thin seaweed rolls) Oshizushi (a layered sushi pressed and shaped in a mold) -Temari (ball-shaped sushi) You’ll also practice using traditional tools for example Japanese kitchen knives. At the end, enjoy the sushi you made yourself—and it is also nice to exchange and try the sushi made by others in the group.The class is open to all—no experience required. We can adjust the class length. For example, we once held a 12-hour, 2-day intensive course that included everything from cooking rice to full preparation. If you would like to change the course content, please contact us. After hearing your preferences, we will set the price accordingly.

Thank you very much for your help at the workshop the other day! Making sushi is a big difference between watching it and actually going there. At first glance, it may seem like a simple process, but I have learned that it is filled with many details and the wisdom of predecessors, from the preparation of ingredients to the formulation of ingredients, how to make it, and how to use tools. When I eat sushi, I have come to appreciate each one. It was also a new discovery to learn about the origins and evolution of sushi and to realize the fun of exploring the roots of everyday things! The story is also very easy to understand with the illustrations on the slide, and he explains the charm of various sushi ^_^ Above all, the warm atmosphere and hospitality of the two of you who taught me was very pleasing. I also felt very calm. Through this workshop, I rediscovered Japanese culture and history and learned about the fun of diverse cultures. I was able to interact with two people who were even more warm and had a very fulfilling time. Thank you so much for the wonderful workshop! And we hope that your workshop will spread to many people!
