Wow is all I can say. This distillery is an absolute must for any scotch whisky fan and/or student. We were hosted by Nick, the owner, and Guillaume the head distillery who was incredibly generous with their time. Guillaume's background is Cognac distilling which was very interesting. Anyway, as a student of (and whisky geek myself) of the technical stuff of scotch whisky production, having the founder and the distiller take you around with personal attention and briefing us up on some real technical points and answering technical questions of mine was sublime. The wash still is direct fired by a wood fire and that is totally unique. As Nick explained, the temperature of the wood fire (versus natgas fired) direct fire is optimal for creation of Maillard Reactions which add definite character to the whisky. The lyne arm is attached in the AM and detached and stored in the PM. I've never seen that before. I've been to 70 or 80 distilleries in Scotland and this one is a stand out of all of them for many reasons - both from a physical set up and people standpoint. You can feel the heart and soul and passion of Nick and his wife Erin and Guillaume in this place. Very different than the usual whisky distillery visit. Don't miss Moffatt Distillery.
