The history of rum starts in the Caribbean around the 17th century. Cooking with Rum talks about the history and influence of rum on the Caribbean, its culture and its cuisine.
Various rums will be present for tasting and flavoring the foods. Since we are on Antigua, we will start with the island award winning 5-year old English Harbor rum and then move on to three other superb brands from countries such as Barbados, Guatemala, Cuba, Jamaica and Martinique.
The food will introduce our guests to how various rums can be used to flavor foods whether you are using a classic dark rum or a filtered white.
Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!
Infants and small children can ride in a pram or stroller

Join a cooking class in a local home high on a hill overlooking the Caribbean Sea. This gives you a beautiful view and an opportunity to experience life the Caribbean way. The class is more of a local experience than a simple cooking class. Classes are taught hands-on or can be as laid-back as you wish. Your host and teacher, Nicole, teaches her classes in a very informal way explaining the history of the food and telling stories about living in the West Indies. Nicole will discuss the various uses of rum in the starter, the main and dessert and then you will enjoy a three-course lunch that includes all the recipes for the class. The history of rum starts in the Caribbean around the 17th century. During this cooking class, you will learn from a local about the history and influence of rum on the Caribbean, its culture and its cuisine... and get to participate in a rum tasting of 6 regional rums too!

I took at group of 12 to Nicole's Table and everyone thoroughly enjoyed themselves. Nicole welcomed us into her home and made us feel like family. She has a beautiful home with an unmatched view of the bay and ocean. The group was totally involved, learned some great skills and enjoyed the rum punch! Will very much recommend and book for future visits.

We joined Nicole and Adam for their Cooking With Rum class instead of a ship excursion and it was the best experience of the cruise. Food, instruction, conversation, drinks...everything was fantastic; it felt like a day at a friend's house. We're looking forward to working with the recipes they provided to be the spotlight of our next party. While we don't have it planned yet, we'll certainly try to schedule another class, or the same one, next time we're on Antigua.

4+ hours of cooking eating and drinking. We participated in the cooking with Rum class. Fun and delicious. Chicken kebabs, rice and beans, plantains and Rumcake. While waiting for everything to cook we got a bit of Rum education and a tasting with Adam.

We were met at the front door and felt like family the whole day. It was alot of fun cooking and just talking about family and anything else. The rum portion was fun and informative. I recommend Nicoles Table to anyone coming to Antigua. Make sure to get a bottle of Havana Club Especial before you leave.

The 'Cooking with Rum' class with Nicole was a highlight of our trip to Antigua, we had such a fun afternoon and came away with many new ideas for cooking back home (and lots of knowledge about rum thanks to the tasting led by Adam). The experience of being at Nicole's Table is one of extravagance and warmth. An exchange of culinary knowledge, a Caribbean immersion, thoughtful conversation, AND delicious food. This was my second time being welcomed into her home and it was such a joy. The recipes I learn there I cook for my family and friends who take care of my property, pets, and plants while I am traveling. It's always a wonderful way to share my travel memories with them.

Your home is beautiful, the event was so well organized and you and Adam were the perfect hosts and knowledgeable guides about the local foods and the Caribbean rums (thumbs up for the rum tasting as well)! The food and drink (Rum Punch, 1-2-3-4) were delicious! If anyone visits Antigua, Nicole’s Table is an event not to miss!

Nicole was an attentive host and catered the experience to exceed our expectations. It was a mix of hands on teachings with education on the history of the ingredients and culture. My family and I enjoyed the interaction with Nicole as she made us feel as if we were visiting a family member. The experience was unrushed and filled with enjoyment. My family and I are looking forward to our next encounter. During our tasting we learned a lot about the differences in the types of rums.
