It is believed that curry came to the Caribbean with indentured servants after slavery was abolished. The influence of curry on Caribbean cuisine is huge. Each island has their own special variation of spices that they call "curry". Many debates have been held in kitchens as to which island has the best curry… But all agree that curry and roti is one of those comfort foods that people crave after being off island for a while.
Nicole explores all the many faces of curry while she creates a meal that fuses a little of the old styles with newer Western flavors. Visitors will learn about the history of curry, its health value, and short cuts that can be used to create various curry based meals. The goal will be to make it easy for visitors to go home and cook the same menu whenever they wish.
Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!

What To Expect
Join Nicole on this hands-on cooking class and explore all the many faces of curry while she creates a meal that fuses a little of the old styles with some newer western flavors. Nicole will teach you how to make curry chicken (and tofu for vegetarians), make the unleavened flatbread known as roti, and all the sides and dessert. Then enjoy a three-course lunch that includes all the recipes for the class. Once lunch is ready, you will enjoy the three-course festival of flavour sitting on a veranda with a beautiful view of the Caribbean Sea. Nicole teaches her classes in a very informal way explaining the history of the food and telling stories about living in the West Indies. 5.00Our visit to Nicole’s Table was one of the absolute highlights of our cruise. We chose the Coordinating Curry Class, and it turned out to be so much more than a cooking lesson — it felt like spending the afternoon in the home of friends who genuinely love sharing their culture, food, and stories. We joined another family and from the moment we arrived, Nicole made us feel completely welcome. She has a warm, engaging personality and a natural way of teaching that makes every step fun and approachable, even if you’re not an experienced cook (like me). The class was hands‑on, relaxed, and filled with great conversations. We learned how to build flavors from scratch, use local ingredients, and create curries that were layered, aromatic, and absolutely delicious. The best part was enjoying everything we made together while looking out over the beautiful views from her home. It was the best excursion of our cruise and gave us a chance to connect with the island in a meaningful way. If you’re visiting Antigua and want something memorable, personal, and genuinely flavorful, Nicole’s Table is a must. This was easily one of our favorite experiences of the entire trip, and we’d do it again in a heartbeat. I also want to cook more and plan to attend some of her zoom classes throughout the year.

5.00Nicole was amazing! She was funny and sweet and knowledgeable. We were so excited to spend the day with her learning how to cook curry chicken. Her house was amazing and so was her husband Adam. After we were done cooking we got to sit on her amazing patio with a breathtaking view of Antigua and enjoy the meal we (myself and my husband) had just prepared alongside with Nicole and her husband. If you ever plan to go to Antigua, go check her out. It is well worth the experience.

Nicole and her assistant were so fun to hang out with for the afternoon, We added on a rum tasting with Adam and it was super informative and tasty. The property was stunning.
