“What did the fisherman bring?” is always the question the morning of a seafood class, This means that the menu is determined by what's available from the local fishermen. Whether it is Mahi Mahi, snapper, tuna or grouper, a delicious lunch using a local fish will be the end result.
In From the Sea, Nicole introduces you to a variety of ways in which seafood is prepared in the islands. You can have a stuffed whole fish, filet, or even Peleau (a dish that has as many personalities as islands in the Caribbean).
Be prepared for a menu that adjusts from the one listed based on what’s fresh and off the boats. But also be prepared to have fun as we adapt, create, and enjoy what we prepare and eat!
Take this class not just to explore new flavours, but to enjoy the experience of learning new recipes with new friends in a West Indian home with great view of the Caribbean Sea!

Be prepared for a menu that adjusts from the one listed above based on what’s fresh and off the boats. But also be prepared to have fun as what you will eat is adapted, created and prepared. The goal of this class, like all of your classes will be to make it easy for you to cook the same menu after you return home. All of this is offered from a home high on a hill overlooking the Caribbean Sea. The experience will give you a beautiful view and an opportunity to experience life the Caribbean way.

We had a wonderful time. The class consisted of us, another couple, and Nicole and her helper, Natasha. There was plenty to do to complete the entire meal, which was two fish dishes, a shrimp appetizer, fried plantain chips, and a mango salsa. We all worked preparing each item with the expert guidance from Nicole. It was so friendly, we all just talked and worked like we were all good friends getting together as we have done this before, even though it was our first time together. We did not feel rushed at any point, and then we all sat down to a nice meal together.

We booked this cooking class while staying at on the island, and it was easily the best experience of our entire vacation. If you are looking for a guaranteed great time, amazing food, and a break from the resort, this is it!From the second we arrived, we were welcomed with open arms and treated like absolute family. The atmosphere was completely laid-back, the energy was high, and the fresh rum cocktails were flowing the entire afternoon. We had a blast cooking a phenomenal local feast that tasted better than any restaurant on the island. We left stuffed, happy, and laughing. It was the perfect balance of a fun activity and an elite meal. Do yourself a favor and book this immediately—you won’t regret it!"

Nicole, a former personal chef, was a delight to work with. She allowed the class (of which there were only 2 couples) to do the prep and cooking with the help of herself and her trusty assistant, Natasha. The dishes prepared were simple and delicious and indicative of the local cuisine. They included local fish and produce, including Mahi Mahi and coconut. The Caribbean style shrimp was a standout and could have held its own as a main. The pumpkin fritters were also delicious. After a relaxing cooking experience, it was time to sit down and enjoy the fruits of our labor. On the patio, overlooking a beautiful valley we sat and sampled the dishes made. Pleasant conversation and full bellies followed. I recommend one rum punch during the class so as not to distract you from your cooking duties. This particular class was titled "From the Sea" but Nicole has several classes available. I am thinking about the jerk class on my next visit which I am already looking forward to.

We had a wonderful time preparing our meal with Nicole and Natasha. There were another couple with us and there plenty of space for each of us to work on something different. The conversation was lively and the weather was beautiful. We prepared two kinds of fish plus a shrimp appetizer along with fried plantain chips and a coconut custard tart for dessert.

If you’re in Antigua and have a love for authentic Caribbean cuisine, I wholeheartedly recommend a visit to Nicole’s Kitchen. While searching for a birthday activity in Antigua, I discovered this excursion and decided to book it with just one day's notice, I couldn't be more pleased with the decision I've made. I chose the seafood menu, and I must say, the food was amazing! Even the coconut tart, which I initially thought I wouldn’t enjoy, turned out to be a pleasant surprise. Not only was the food amazing, but the company and conversations made us feel like we knew them for a long time. We extend our warmest wishes to Nicole’s Kitchen for all the best! Fantastic experience, so happy we did it! Admission fee was perfect for what you get. Length of visit was perfect! The atmosphere was stunning with views for miles-cooking space was spacious. Crowd size was good with only one other couple. Nicole and her staff were very welcoming! This experience is best for all. Set in a beautiful airy home overlooking NW Antigua, with a warm welcome we enjoyed helping to prepare Shrimp, Mahi Mahi and Salmon. You’d miss out if you don’t get involved Under Nicole’s friendly instruction. We sat down on her deck to enjoy the food washed down with rum punch, juice and water. What a great way to spend an afternoon in a true family atmosphere and learn something about Antiguan cookery.
