My husband and I cooked Thai food often back home in the States. I mean a lot, usually 4 -5 times a month. We went into this thinking we might pick up a new technique or something. Wrong. Everything we knew about cooking Thai was wrong. Joyce, our chef, was a pure delight. She's super funny and very personable. The way she broke down the course into 4 meals over 4 hours was really easy to learn the basics, practice the basics, cook your meal, and enjoy it around the table with the other guests. I know booking things like this in Bangkok can be stressful. What if it's in a bad neighborhood? What if the guide's English is hard to understand? What if they don't speak English? Then there's the anxiety of - is the food provided clean, sanitary, and safe to eat? The minute we arrived, Joyce met us with water. Seeing the kitchen reminded me of watching some Top Chef TV show. It was really everything I wanted and, honestly, a little more. The food was, by far, hands down, the best Thai food I have ever had. After class, we went for dinner at Cabbages and Condoms and put to use our new knowledge of Thai food. I'll admit, the food at the cooking school was so so so much better than C&C. Stop researchign and book Joyce and her class. You wont' regret it.

Four hours of immersive experiential learning, great teacher Joyce, great taste of four Thai dishes cooked yourself, no losing the hotel! Make one, eat one. The problem is, the first two courses of Dongyin Gong soup, Thai fried river flour, a little full, the third green curry chicken is not so fragrant, the good thing is, the last sweet mango glutinous rice, delicious is back. Each dish is coloured and fragrant, good looking and delicious. Joys' teaching is great, detailing the name of each ingredient and letting me taste it. In particular, the third course, green curry chicken, is made with the sauce using raw stone echinacea, no off-the-shelf, no blender, original cooking experience. The location of the classroom was also great, with canals and good bridges nearby, and a large temple with a huge and good-looking golden Buddha statue.

We had such an incredible experience cooking with Chef Joyce! She took the time to explain all the ingredients commonly used in Thai cuisine, and we learnt how to prepare authentic dishes that tasted even better than many restaurants we’ve tried. Her instructions were clear and easy to follow, and the food portions were extremely generous. The location was very easy to find, only around 15 minutes from our hotel with a smooth, safe drive through a lovely neighbourhood. The class was well organised, and everyone had their own cooking station, which meant we could adjust spice levels and cater to allergies. The kitchen was air-conditioned, very clean, and Chef Joyce even provided gloves and bottled water. It was an unforgettable experience — not only delicious but also educational. I walked away with priceless knowledge, and the recipes were surprisingly easy to recreate, so I can’t wait to make them at home. A must-do experience if you love Thai food or want to learn to cook it properly. Thank you, Chef Joyce, for such a memorable day!
