We always start the tastings with an explanation of how to taste a wine properly. The methode is based on the Wine & Spirit Education Trust systematic approach to wine tasting. Your guide reached the highest level of this school in London last year and has ten years of experience leading tasting to both amateurs and professionals. Then along with tasting wines, he will guide you through the different areas within Burgundy, the different grapes, the history, the rules of production, how to read a label in Burgundy etc. Everything you want to understand about the region will be approched. The atmosphere is always relaxed, you won't feel rushed, and you won't feel like you can't ask a question. This was an intimate, educational, fun and tasty experience. Matthieu is very well versed in all aspects of wine making and patient with questions. He made our experience enjoyable and fun. We learned about wine pairing and what different wine aromas mean. Plus! He has yummy wine for sale.

Matthieu was an excellent guide for this tasting. I ended up being the only person that day but Matthieu was extremely passionate and willing to explain and answer every question I had. He also made some excellent recommendations on what to do in dijon itself. Overall it was an excellent testing experience and I came away feeling I had learned about Burgundy.
