After years of fine dining and living out of mexico, I returned to my roots to create "The Real Oaxaca Cooking Experience."
At Quinta Brava, our dedicated team of three professional cocineras and the chefs is passionate about guiding you through an unforgettable culinary journey.
This unique experience aims to preserve and share the rich heritage of ancient Oaxacan cuisine. You’ll learn traditional cooking methods and use authentic utensils that our ancestors cherished. Under the guidance of our experts, you’ll prepare a variety of recipes from across Oaxaca on a traditional wood stove known as the "Lorena," crafted from mud and sand.
What sets this experience apart is that you will be the main chef, cooking everything by hand. Immerse yourself in the magic of Oaxacan culture and flavors, and leave with not just recipes, but a deeper appreciation for this culinary art. Join us for a truly authentic and hands-on adventur

The class was amazing! We don’t typically do group things like this ever, but something about it changed our mind. And we are so happy it did. The entire group was just delightful. Chef was so fun and informative. We happily recommend to anyone who wants to learn about Oaxacan cuisine, the act of cooking it, history of ingredients; or if you just want to have a great time, lots of laughs, and maybe a few beers while you’re at it. It was an experience we very much treasure!

This class was incredible. A friend recommended it to us, and it absolutely lived up to the hype. We made traditional corn tortillas from scratch, learned about the history and cooking process of mole, explored new flavors, and gained a real appreciation for the food, from the ground to the table. Even in a group of 15, the experience felt personal and tailored to everyone’s tastes. The setting was beautiful, and we loved getting to wander around the farm and visit the local market to gather ingredients for our dishes. Miguel, the owner, was an exceptional teacher, engaging, knowledgeable, and truly passionate which made the whole experience one of a kind. It added so much to our time in Oaxaca and was a true highlight of our Mexico trip!

We loved everything about this class! We were picked up from Oaxaca center and taken to a small farm with beautiful garden and outdoor kitchen. We met Jose there and started to plan the menu - we set the menu according to our wishes, while drinking hot chocolate or coffee and eating the first course of the day. Next stop was the market where Jose got all od the needed ingredients. Cooking was so much fun, we made 4 dishes and we got a chance to try 9 moles - which was pretty awesome! The atmosphere was great and Jose was a perfect teacher - he is such a warm and funny person, we loved cooking with him so much! For the money you pay you really get so much food, but even more important you get a perfect day in Oaxaca!

We spent a lovely day cooking authentic Oaxaca dishes Our chef Jose was very friendly and knowledgeable and created an enjoyable informative class. We tasted 9 moles, made different salsas, made tortillas from scratch and cooked a full mole dinner and authentic soup. The staff at the garden were all helpful and kind. Would highly recommend. Jose even made us some beautiful tasty mescal cocktails.

We had a great time at this cooking class. It was one of our favourite things that we did on our 3 week trip to Mexico. Miguel and his team were amazing at guiding us through the class. Miguel not only has a great understanding of traditional Oaxacan cuisine, he had great knowledge of the history and origins of food around the world. We felt like we learnt at lot about Oaxacan food but also the history behind it. The property was also amazing spot to cook, relax and tour the farm. If you’re looking for a cooking tour we highly recommend this one. Thanks again team

Miguel and his friendly team will welcome you into their home and guide you through a personalized cooking experience based on what you want to learn! The cooking and eating all take place in Miguel’s outdoor kitchen and gorgeous gardens. So relaxing! The experience ends mid-afternoon unless you have time restraints and want to end earlier, which can be accommodated. But I would recommend planning to spend a leisurely day there!

It was an amazing experience. Hospitality was top notch, from the moment we were picked up. We learned to cook everything from scratch, and the food was great. Eat from the moment we got there, until the time we left. Miguel is a great teacher, he is very knowledgeable. He knows the history of the food and he is an excellent chemist. 😊

Wow.. just wow - the beautiful gardens and outdoor kitchen and the walk to the market were so special.. and what excellent hosts - very friendly, informative and easy to follow guidance on how to make moles, salsas, empanada's and they even made us some special mezcal mojitos. We really felt like this was an authentic, personalized experience were we got to know everyone and had fun, learned a lot and made some beautiful connections. Very inspiring - highly highly recommend, you will get so much more then a cooking experience!!
