After years of fine dining and living out of mexico, I returned to my roots to create "The Real Oaxaca Cooking Experience."
At Quinta Brava, our dedicated team of three professional cocineras and the chefs is passionate about guiding you through an unforgettable culinary journey.
This unique experience aims to preserve and share the rich heritage of ancient Oaxacan cuisine. You’ll learn traditional cooking methods and use authentic utensils that our ancestors cherished. Under the guidance of our experts, you’ll prepare a variety of recipes from across Oaxaca on a traditional wood stove known as the "Lorena," crafted from mud and sand.

My husband and I had such a good time with our son and his wife. The host was wonderful at explaining the various moles and traditional cooking methods. Each participant was involved in different aspects of the dishes we cooked and the food was tasty. The other couples were also fun to learn and chat with.

My Sister and I had the pleasure of an incredible farm-to-table Oaxacan cooking experience with José as our instructor today. We were picked up in Oaxaca Central in a van and driven out to a smaller more laid back area outside of town where there was an outdoor cooking experience with José showing us the old traditional methods of making foods such as corn tortillas made from scratch, moles, salsas, empanadas and more.. We were given a tour of their large fruit and vegetable garden and their goats, chickens and such. Then we walked to the local market to shop for additional fresh ingredients. We arrived back and José put us to work, showing us the authentic cooking techniques over fire, using all the freshest ingredients. We enjoyed several dishes and it was a wonderful experience in a laid back large back yard setting. They have a great set up there for a truly memorable day. Oh, and we enjoyed the cocktails too!!

A wonderful experience! Learn how to make tortillas from corn masa. They showed us nine different Molay's and we got to pick two that we made from scratch.. Delicious.!

What a lovely surprise. This was a great cooking class, loved the setting, the short walk to the market, learning the processes of making some authentic food and getting to taste all the different moles.

We had an excellent time at this cooking class. It was such a unique experience learning the traditional way of making corn tortillas , learning about the different types of mole’s and being surrounded by the agriculture the food was made from. Beautiful scenery and staff, Jose was so lovely we really enjoyed our time ! And we were full the rest of the day!!

We had a lovely experience, and a very fun & delicious day. First, we were really fortunate to have a great group of relative strangers. Our host was Jose' and we felt so lucky to have him - skilled, personable and with a great sense of humor. This was so much more than a cooking class. We discussed then tasted the recipe choices, then took a short walk into the village to purchase supplies. We made two different main dishes (two moles, in our case) plus empanadas, rolling out tortillas from scratch, a salsa learning experiment, and a dessert. Beer, water and mescal available. All in a lovely garden with an outdoor kitchen. Jose' made this a really fun day. My only suggestion would be that Quinta Brava (owner) supply some sort of rough recipe to take home with us.
