Paella was born here in Valencia—and this hands-on cooking class teaches you the real recipe, not the tourist version. Learn to make traditional Valencian paella with meat and vegetables, the way local families have cooked it for generations. No seafood. No shortcuts. Just authentic technique from Valencian chefs who grew up making it.
Your experience starts at Ruzafa Market, a neighborhood gem where locals shop for fresh ingredients—far from the crowds of Central Market. Then, join our small-group workshop to master the secrets: achieving the perfect socarrat (the prized crispy rice crust), using Albufera rice from Valencia's own fields, and balancing saffron like a pro.
While your paella simmers, enjoy a sangria-making workshop and sample traditional tapas. Then sit down to feast on your creation with local wine, salad, mistela, and homemade dessert.

We will meet at the door of San Valero Parish. We will go to the Ruzafa market together and we will make the purchase of the fresh products necessary to cook a good paella. While we are making the purchase we will tell you the origin of the paella and customs and culture of the Valencian people. Later we will walk for 8 minutes to reach the kitchen where we will hold a sangria workshop. The chef will be waiting us with some delicious tapas accompanied by sangria, beer, water ... Then our chef will explain step by step the preparation of the authentic valencian paella (chicken and rabbit) and once finished we will sit down to taste it. We will accompany the paella with a Valencian tomato salad, Valencia wines, seasonal fruit, typical Valencian sponge cake, sweet wine and coffee.
