Nestor was a wonderful teacher and chef who took us through the marketplace to pick up the seafood and walk our group though each step of the cleaning process for each type of seafood, how to spot dead clams/mussels to discard, and then of course how to cook the paella. I feel confident in being able to make paella at home now that I know how to tackle each step. The paella was probably one of the best paellas I have ever eaten. The crunchy bits of rice at the bottom was the biggest bonus as it's hard to come by in restaurants and the paella at restaurants are typically overly salty in the States and this was just the right amount of salt. We had a blast with the other people we met in the class as well. Sangria was also delicious and so was the almond cake. What a fun 3 hours!
