Ramon was amazing! Our Paella making experience was an outstanding afternoon. The food and drinks were all delicious, from the ham and cheese appys and sangria to our expertly crafted paella and wine. Ramon guided us with laughter and really clear explanations of what to do and why in the creation of the paella. He encouraged questions and conversations It was the 2 of us with a group of 10 who welcomed us and it felt like we were having an afternoon with friends. An experience we will remember fondly, a highlight of our trip to Valencia!

Our paella-making day in Valencia was a truly unforgettable cultural and culinary adventure. The day began with a guided visit to the local mercado, where we handpicked fresh ingredients—nothing frozen, nothing artificial. This was traditional paella Valenciana, so no seafood—just chicken, rabbit (conejo), local green beans (judía verde), and rice. Led by a world champion of paella, we learned every step of the process, from preparing the sofrito to achieving the perfect socarrat—the prized crispy layer at the bottom of the pan. We quickly discovered that timing, fire control, and ingredient placement are critical. As our chef warned us, “Es catastrófico quemar el arroz”—burning the rice is a disaster! Throughout the day, we sipped homemade sangría, shared laughs, and soaked up the atmosphere. The chef’s son even joined us for lunch, creating a truly warm and welcoming experience. When it came time to taste our creation, it was simply the best paella we’ve ever had—rich, flavorful, and cooked to perfection. A dish worthy of its world championship status. This was more than just a cooking class—it was a deep dive into Valencian tradition. An absolute must for anyone visiting Spain’s paella capital.
