Hi, I'm Giorgio, welcome to our ancient family vinegar factory.

Together with my father Mario, President of the Consortium of Producers "Antiche Acetaie" and President of the Association of ABTM D.O.P. I share the passion for ABTM in all its facets, from production to the disclosure of its secrets.In the acetaia you can see numerous batteries including the one started by my great-grandfather Mario in 1905 still in production.

We will also talk about other important batteries for my family such as those started by my grandfather Giorgio in the early 1950s in honor of the birth of his children.

Thanks to our great passion for ABTM we have decided to open the doors of our house and welcome you to this magical world.

What To Expect

Welcome to Acetaia Gambigliani Zoccoli, one of the few remaining vinegar factories that produces ONLY and EXCLUSIVELY ABTM D.O.P. We propose a visit with explanation to the Antica Acetaia followed by a rich tasting of our beloved product included in a real lunch. You will be greeted by Mario and Giorgio Gambigliani Zoccoli who will present the history of the family, the farm, the ABTM D.O.P. and its production techniques. You will continue with the visit to the Acetaia in the attic of the Villa where you will be revealed some secrets on the tasting and gastronomic use of ABTM D.O.P. At this point you will be ready for the rich tasting of ABTM in combination with gastronomic products: • 3 aging of Parmigiano Reggiano (18 months, 24 months and over 30 months) • 2 types of ricotta (cow and sheep) • 2 types of omelette with vegetables • 3 types of baked dumplings • 8 different cured meats (eg Parma Ham D.O.P., Mortadella "Bologna", salami, greaves, coppa, pancetta, coppa di testa, lard) • Parmesan risotto • Desserts • Coffee • House bitters

    The experience was very good. We were picked up at the station in Modena on time and it was a short ride to the Villa. The staff were all excellent, the Balsamic information delivered professionally and lunch with Balsamic vinegar tastings was delicious.

    Mario, the owner, was very gracious especially since we were late. He gave us an overview to “catch up” with group. The balsamic experience included the history of the family and their batterie of barrels. Then down to the luncheon where we tasted 2 different ages of balsamic and learned about and paired the balsamic with different ages of Parmesan and other cheeses. Luncheon consisted of several types of meats, cheeses and focaccia, limoncello and dessert. Staff was friendly and informative. Definitely worth a visit.
