Today, 8 June, we took a cooking class with Francesca in Sicily. We learned the techniques to make 3 dishes: Ravioli with Eggplant, Pasta w/ Sausage and Zucchini and for desert - Tiramisu. We learned how to pick the appropriate vegetables, understand the types of flours, seasoning, and oils and preference of one over another. We had to prepare our ingredients, proper cutting and cooking technique. And the tools used for each dish and how to use them. We made the pasta from scratch: Flour (00), Egg, and experienced using a Pasta Machine. We experienced it all. We cooked each portion of the meal, learned what to look for and when it was ready to add the next ingredient. We cumulated this with 2 favorable and tasty meals; and finally desert. Finally, I never used or thought I'd like Basil but Francesca showed me how to prepare, cook, and appreciate its fine flavor. So, when in Sicily, and if you have time, I highly recommend a side trip to Bagheria and a cooking class with Francesca. kam from Hawaii 2025

Gianpiero was an amazing host. We had the best time learning how to make pasta and tiramisu with him. He’s very knowledgeable and friendly and makes the whole experience a blast! You won’t regret doing this experience. My only advice is to eat a light lunch the day you do this, it’s a lot of delicious food. It would be a shame if you don’t get to fully enjoy it all!
