Long before the arrival of the Spanish, Mesoamerican cuisines were already a feast of complex flavors and intense aromas, such as the dishes known as moles, which come from the Nahuatl molli, which in Spanish means salsa. In our Oaxacan Moles Class, you will have the opportunity to discover with Chef Carrizosa how this culinary tradition has evolved in Oaxaca, from pre-Hispanic techniques, to dishes with viceregal influences that are still preserved. You will learn how to prepare the Green and Yellow moles, made with endemic chilies and ancient techniques; as well as the Almond and Red moles, heirloom dishes of miscegenation with ingredients brought from the Old World and Asia. A 4-mol menu, designed to let you know the richness of its flavors, pairing each of the dishes with a different type of tortilla.

A wonderful experience learning about and preparing four different moles, two prehispanic and two during colonial period. Oscar shared so much information during the class and then followed up with the recipes. Our little group of three were was so happy with the afternoon.

Taking the 4 Moles Oaxacan Cooking Class at Casa Crespo was a truly enriching and delicious experience! Chef Óscar is not only incredibly knowledgeable but also passionate about sharing the depth and beauty of Oaxacan cuisine. I was amazed to learn that there are around 54 different types of mole, and in this class, we got to explore four of them, each with unique ingredients, history, and flavor profiles. From the warm welcome to the hands-on cooking techniques, everything was thoughtfully guided. Chef Óscar created an atmosphere that was both professional and relaxed. I appreciated the balance between learning and enjoyment. The ingredients we used were fresh and locally sourced, and the class gave me a deep appreciation for the complexity of mole. This wasn’t just a cooking lesson, it was a cultural immersion. Sharing the kitchen with fellow food lovers from different parts of the world made it even more memorable.
