You’ll prepare handmade dishes that Japanese people truly eat at home, using natural ingredients and seasonal vegetables. Learn the fundamentals of washoku (Japanese cuisine), including how to make authentic dashi (Japanese soup stock) without additives. All main dishes and sides are made from scratch.
This is not a touristy cooking show—this is a heartwarming, real-life taste of Japan.

In this class, you’ll learn how to prepare a traditional Japanese norimaki (sushi roll), one main side dish of your choice, a seasonal vegetable dish, and a comforting bowl of miso soup — all menus include these dishes. The norimaki can be substituted with an onigiri (rice ball) if you prefer. For the main side dish, please choose from: Teriyaki Chicken – tender chicken glazed in a sweet and savory soy-based sauce Saikyo Yaki – miso-marinated fish grilled for a rich, delicate flavor Gyoza – pan-fried dumplings filled with ground pork and vegetables We’ll begin by making dashi (Japanese soup stock) completely from scratch — a skill at the heart of Japanese home cooking and the secret to creating depth of flavor in everyday dishes. This is a wonderful opportunity to experience the warmth and balance of Japanese family meals while learning techniques you can easily recreate at home. A vegetarian option is available upon request.

Great environment for cooking. Catering to learning with pictures and brief history of the food being prepared, with premium ingredients prepped beforehand. Aki was superb in teaching both the novice and experienced, how proper food is prepared in Japanese households. Providing a list of choices, then going off-book at one's request because of dietary restrictions and tastes, then providing suitable replacements was nothing short of amazing. Learning the art of how to make each ingredient more beautiful and presentable was worth the cost of the class, easy. Hope Aki is still teaching for a future trip! Easily a Five Star experience.

We had such a great time cooking with Aki! The experience was very engaging and she walked us through every step of the process. We made sushi, gyoza, and miso soup and it was all fantastic.
