Join us for an interactive cooking lesson where you'll learn how to make three classic French pastries: eclairs (chocolate and vanilla), chouquette, and choux (with cheese and cream). Equipped with an apron and all the necessary utensils, you'll be hands-on in the kitchen, learning step-by-step how to create these quintessential treats. And of course, no French pastry experience would be complete without tea and coffee to enjoy with your freshly baked goods!
Throughout the lesson, you'll have complete control over your creations, from the moment you first lay eyes on the recipe to the final result coming out of the oven. I'll be there to guide you every step of the way, providing full explanations and teaching you the techniques you need to guarantee your success.
At the end of the lesson, we'll have the chance to taste your delicious creations and chat about your trip to Paris. I'll also be happy to provide you with culinary advice, recommendations, and opinions.

Making the choux pastry: Heat water, butter, and salt in a saucepan until the butter melts. Add flour and mix well until the dough comes away from the sides. Transfer the dough to a bowl and add the eggs one at a time, mixing well between each addition. Piping the choux pastry: Transfer the choux pastry into a piping bag fitted with a plain tip and pipe sticks of dough onto a baking sheet lined with parchment paper. Baking the choux pastry: Bake the choux pastry in a preheated oven at 200°C for about 20 to 25 minutes, until golden and crispy. Making the pastry cream: Heat the milk in a saucepan. In a bowl, whisk egg yolks, sugar, flour, and cornstarch. Pour the hot milk over the egg mixture while stirring constantly, then pour the mixture back into the saucepan and cook over low heat until the cream thickens. Adding the filling: Let the éclairs cool and cut them in half. Using a piping bag, fill them with chocolate/vanillia/coffee et ... pastry cream. Making the glaze: Melt dark chocolate and add melted butter. Mix well until smooth. Glazing the éclairs: Dip the top of the éclairs into the chocolate glaze.

It's more social than I expected. Ingredients are premeasured so you can focus on technique and chat. I'm not sure I'll be an expert but I'm definitely going to try it at home. I was actually quite impressed with the results. Even my imperfect shaky piping produced pretty and delicious eclairs. And I don't actually like most eclairs. The Gamache was dark chocolate instead of sugar icing which helped.

We had a wonderful time. Our instructor were patient and friendly and helped us surprise my daughter for her 16th birthday. Life long memories were made..the pastries were DELICIOUS and we now have the recipe to bring back with us to the US. This is a MUST DO experience for bakers and petite bakers alike.

Our chef was very good and patient even allowing us to re do some parts. And let me add CHOCOLATE to additional cookies. At the end they give you the recipe to be able to do at home.

The class is advertised as a hands-on experience however this is not the case. If you are seeking an experience where you have your own work station and are able to make your pastry from start to finish then this cooking school is not the appropriate one to choose. On arrival, we were shown to a small room where there were 3 one burner stoves set up for the 6 class participants. The ingredients had been measured out to be shared between 2 participants. The class involved stirring the creme patissiere by 1 one participant and mixing and cooking the choux pastry in a pot on the stove, again by 1 participant. The pastries were placed in and out of the oven by the class teacher. We were each able to decorate / finish the pastries at the end, however there was not enough creme patissiere to fill my pastries.

Great fun with my college aged boys to learn about eclair making which we all love. Very hands on experience. Hands down I really enjoyed this. But to give some critique: Atmosphere was a bit dull. The room was small in a building that looked like squatters had inhabited it. While our chef was good. She was a bit preoccupied with something else it seemed. She gave great instructions but not a lot of personality.

Wonderful class! Our instructor was friendly and knowledgeable. We learned a lot and made some delicious eclairs! It was a small group, just my family of four and one other couple, really personalized attention and a great setup.
