It all starts with a warm cup of tea or coffee before jumping right into the crafting of your own Buttery Croissant, Pain au Chocolat (or chocolate croissant) and the Pain au Raisin ! Small groups of 8 allow the chef to follow closely how you learn new skills and knowledge.
First, discover the equipment, the ingredients, and the theory behind the making of the croissant. You will be making it from scratch with quality ingredients we selected from our local producers.
Then kneading the predough is where it all begins. You will provide the last ingredient with the rolling pin as you roll out the finished dough from which you will shape your own pastries! Time will do the rest while they rest and bake.
It all ends well with the tasting of what you have baked and the always instructive chat about your trip to Paris. We, as chefs, are very happy to give you our culinary advice, recommendations, and opinions and also learn from you. Don’t forget to take away the leftovers!

Prisca was an amazing teacher! She was so patient, informative, and kind. She made the experience fun!! She also not only taught us just about making croissants but she also taught us a little bit about the culture and even some French words. I would highly recommend!!

What a fun afternoon! Really lovely environment, felt very traditional. Rosalie, our chef, was absolutely amazing … and it was her first day! She was friendly, welcoming, informative, funny and super helpful. A really great way to spend time together with the added benefit of making the best pastries in the world, ever!

We were able to sign up the night before for a croissant and pain au chocolat class and we were so glad we did. Not just a demonstration, we actually laminated the dough with the butter and baked delicious pastry. Thank you so much for such a wonderful experience!

We signed up for a baking class and did, in fact, make delicious croissants as promised. However, for the price—over $600—we expected a much nicer overall experience and atmosphere. We were given plastic aprons, which felt disappointing given the cost; proper cloth aprons would have gone a long way. The space itself was uninviting and extremely cold. We attended in December, and it was around 35 degrees outside, yet there was no heat inside. The bathroom was located directly in the kitchen, and the kitchen itself was quite unappealing. The instructor who showed us how to make the croissants was a new baker, and we didn’t feel we received much expertise or insight beyond the basics. While she was very nice, the instruction felt limited and repetitive. These comments may sound picky, but when you are in Paris and paying a significant amount for a baking class, you naturally have certain expectations. The refreshments were limited to Lipton tea and water; nicer tea would have been more appropriate. The waiting area could also be improved with small tables so guests can sit and enjoy their warm croissants with a cup of tea after the class. If the owners read this, there is truly a lot of room for improvement, and with some thoughtful changes, this could be a much better experience.
