Watch a professional knife skills performance and try your hand at slicing sashimi.

In this class, each participant will use a sashimi knife to cut a piece of sashimi, then place the sashimi on top of vinegared rice to create a seafood bowl~Keisen-don~.

Instructor Naoya Kumagai will also provide a brief explanation of Japanese knife techniques.

Enjoy your handmade Kaisendon with miso soup and sake for a complete meal.

Sashimi Cutting & Kaisendon Workshop

11:00~/13:00 Greeting ~Introduction

11:10/13:10 A lecture on sashimi knives by the instructor

11:20~/13:20~ Demonstration of how to use Japanese knives by Mr.Naoya

11:30~/13:30~ Practice with all participants

1) Sashimi knife practice using flour dumplings

2) Practice cutting sashimi for each person using a sashimi knife

11:50~/13:50~  Make a Kaisenndon (Seafood bowl)

12:00~ Tasting time (Sake tasting is also available)

What To Expect

In this class, each participant will use a sashimi knife to cut a piece of sashimi, then place the sashimi on top of vinegared rice to create a seafood bowl. Instructor Naoya Kumagai will also provide a brief explanation of Japanese knife techniques. This is a short course that focuses on practicing cutting sashimi.     For the sashimi and kaisendon workshop we had an incredible time. Kappodo spends time with you the entire way and makes it a very warm experience. Helpful guidance, many laughs and great English. I highly recommend this workshop to anyone who is interested in cooking or someone who wants to just have a great experience in Japan.

    This is such a wonderful class. I can't imagine buying a Japanese knife and NOT taking this class. You'll learn what makes the knife es special, how to cut vegetables and most importantly sashimi. Finally we get to learn how to sharpen our knives using proper technique and how to test them for sharpness. Our self prepared pole bowl lunch was delicious. We did our class in English and it was perfect. Highly recommend, even better before you buy your knife.

    A really interesting experience! An original and different way to learn something new about Japanese culture from the inside, in a much easier and more fun way than simply visiting a museum. The guys then really nice and prepared. Highly recommended!

    This was a great experience! We learned a lot about Japanese knives and how to use them properly. The lesson was very informative and will help us immensely in the future with our cooking skills! We also got to learn how to make and marinade sushi and even got to eat it. Highly recommend!
