A deep dive into the world of fine Japanese knives, a hands-on experience in Tokyo. Participants will learn how to make a Japanese knife, sharpen the knife, watch a demonstration of knife cutting, test their knife skills, and participate in a cooking class to make sashimi zuke-don for lunch. You will begin with a detailed explanation of how a Japanese knife is made and the culture and customs of Japanese knives. Then, you will observe a demonstration of knife work by the instructor and actually use a Japanese knife to cut sashimi. By actually using a Japanese knife, you will learn how sharp it is and how to use it to cut sashimi. After honing their knife skills, students will participate in a cooking class where they will learn how to make zuke-don. Zuke-don is a bowl of rice topped with marinated sashimi (usually tuna, but the fish used can vary depending on availability). While the tuna is marinating, you will learn how to sharpen a Japanese knife using a whetstone. Even if this is your first time, the instructor will help you. At the end of the class, you will be able to enjoy a delicious tuna bowl and miso soup. You can also taste our original sake.

We came here to learn about japanese knives (sharpening, history, techniques etc..) and our expectations were completely fulfilled. The Chef and interpreter were super professional, explained everything with patience and in detail and also answered any questions we had!

I highly recommend this class to anyone looking for an introduction to Japanese knives and a hands-on class. The instructors were so knowledgeable and professional. They demonstrated different techniques with several different knives and walked us through how to sharpen and maintain them. We were able to use the knives ourselves to prepare a delicious tuna sashimi meal. The shop downstairs has knives and other items for sale. This class is one not to miss when in Japan!

This was the most beatiful experience I had in Tokyo. Super nice and helpful staff, they showed me every technique from the forgeing of the knifes to the hand gestures to use while cutting sashimi. While the tuna was marinating, they taught me how to sharpen a knife using the rock grid and finally they made me grate the wasabi with the shark skin! The translator and the chef where so nice and they made my experience unforgetable, being both funny and precise. Thanks a lot for this beautiful experience, I will surely recommend it to everybody!

Really interesting learning experience! It’s the traditional way of cutting fish the proper way and using a single edge Japanese knife as well as sharpening it. We were taught by a master sushi chef who demonstrated how to do it. It was a unique and wonderful experience, better than we expected! I recommend for any visitor to do it, you will learn so much about Japanese knife making, using and sharpening as well as making your own tuna rice bowl!!
