In the workshop, the master chocolatier of three generations becomes a true cocoa alchemist. The secrets transmitted from grandmothers to mothers and from mothers to sons flow in the workshop. the magical character of this workshop is its vision.
The true magic, however, lies in his collaborative project with the cacao growers of Oaxaca. Together, they weave a fabric of flavors and sustainability, connecting the past and future of Mexican cocoa in a symphony of sweetness and commitment. Here you will learn how to make your chocolate. At the end, you will taste your chocolates and the various expressions they can find

The Oaxacan Chocolate and Mexican Flavors Class is a workshop to learn about the processes surrounding Cocoa, its history, its processes, its flavors and how it evolved into a product known worldwide today. Chocolate bars have a history of evolution in the last 300 years and although many think that the origin is Europe or Africa, the true place of discovery was in southern Mexico. Oaxaca in its southeastern part has one of the best cocoas in the world, called "Criollo" in the tropical jungle area next to the Pacific. Designing your chocolate often depends on how we feel, how we want to perceive the world or how we want to make our loved ones feel. The benefit of chocolate is that anyone who tries or eats it will have a positive effect, they will have energy, happiness and clarity in their passionate decisions. This workshop is designed to learn about the history, the effects and how to prepare your chocolate from home, remember Oaxaca and know that there is a gastronomic diversity, in drinks, food, pharmaceuticals or edible aphrodisiacs.

A fantastic experience with Thomas who provided a thorough heart-felt explanation of the Oaxacan chocolate making process with lots of hands on time. You can taste the quality/purity made from locally grown cacao. Definitely recommended!

My wife and I had a great class with Tomas. He introduced us to the history and production of the cacao beans as well as an interesting personal story of his grandmother and her inspiration to his chocolate career. We produced from start to finish some delicious candies and a Oaxacan hot chocolate. The whole experience was wonderful and memorable.
