Welcome Aperitif
Your hosts Paolo and Simone learned how to grow and make wine, how to make pasta from scratch, and of course how to prepare wonderful local delicacies from their Nonna. You'll get a glimpse of this characteristic town and it's rich history dating back to Roman times. After a short walk, you'll arrive at a beautiful wine cellar where your hosts will open the wines produced at the family vineyard, namely Frascati Superiore D.O.C.G. (don't worry, you'll learn what all those initials mean!) and Vagnolo. After tasting each wine with some traditional appetisers, the pasta making begins! Our chef will teach you how to make real homemade pasta, so be ready to get your hands dirty! Once you have mixed and rolled out your pasta you will be faced with a difficult choice, WHICH Roman style dish would you like to create? Choose from three typical recipes, Carbonara, Amatriciana, or Cacio e Pepe and let the chef guide you through the basics of preparation. The grand finale? Buon Appetito! Sit and enjoy your pasta while conversing with the other guests for as long as you like. After dinner you'll have a chance to view the "caves" below the wine cellar.

Nico and Claudia and the rest of his Family are simply amazing. One of the most thoughtful and fun experience in pasta making that I’ve been to. A quick trip by train and you are transported to the lovely town of Frascati. Go see and learn about Nico and family from pasta making to wine making you won’t leave disappointed.

So much fun! My entire family including teenage son had a great time learning how to make pasta, so much in fact they only want to make pasta from scratch from now on. Can't rave enough on how awesome this experience was.

Niko was incredible! We got there early and while we were waiting he shared a ton of information about the wines, the family company, pasta making, and his passion for food. The experience started with a tour of the town of Frascati and the history during World War II. Then we began wine tasting both their home made wine for white and the red wine. Both were great. Talked about the wine and how it was stored and fermented in the underground caves under the room we were in. Then made pasta and had several options for how we wanted the pasta made between the different pastas and sauces. I had the carbonara and we had the cacio y Pepe and Amtriciana. All were delicious and not too hard to make. Got to tour the cave system under the building that they own and talked about its past uses. Amazingly kind people and so nice. This was a highlight of our trip to Italy!

Simone was the best! We did this experience on our first day in Italy at around 7pm. We opted to meet the group at the restaurant which wasn’t a bad walk from the train. The pasta making paired with their wine was such a great experience. Not to mention I feel that this was the best pasta we tried in Italy. We ended up buying a bottle of their wine because it was just that good! The tour also added to the experience. I would definitely love to do this again as you meet great people as well while doing it.

We had such a great time. The guide met us at the train station, then we walked through the beautiful town (short walk). As we walked our guide (Rosi) gave us some history of the town. The wine was wonderful. The pasta making was fun and also delicious!
